STEP TWO: CREATE FOIL PACK
Tear off two 12-inch lengths of heavy duty aluminum foil. Place ½ of the fries in a single layer in the center of the foil. Loosely fold the foil around the edges to form a boat shape, leaving a large hole at the top to allow steam to escape. Repeat this with remaining fries and foil.
STEP THREE: GRILL
Place the foil packets on the grill over indirect heat. Cover and grill for 20 to 30 minutes, turning the packets once, until the fries are crispy and baked through. Top the fries in each packet with 2 slices of cheese and grill for a few minutes longer until the cheese melts. Sprinkle the fries with sliced green onions and bacon bits and serve.
