Stack Up Dinner: Tex-Mex Waffle Tacos

Tex-Mex Waffle Tacos
Believe it. This crowd-pleasing meal is on the table in a quick 30 minutes.

Some of my family’s favorite foods are Tex-Mex. We can never get enough enchiladas, nachos, quesadillas and, of course, tacos! It seems like they’re usually easy recipes and certainly delicious. 

It’s always fun to put a twist on an ordinary taco. These tacos are similar to the ones we would get at the State Fair. Instead of using a fried dough, I use Pillsbury Grands Biscuits and bake them in the waffle iron. Then we top them with chili and all our favorite taco toppings. They are always gone in no time, because they’re so good!

Tex-Mex Waffle Tacos

Start by oiling the inside of waffle maker with cooking spray. Heat waffle maker. Unravel biscuit dough from can. Separate into eight biscuits. Take one biscuit and place it in the center of the waffle maker. Close lid and cook for three minutes, or until golden-brown. Repeat with all biscuits.

Take a half cup of prepared chili and pour it over the center of each waffle. Top chili with all your favorite taco toppings; lettuce, cheese, sour cream and salsa. Serve immediately!
