I love that this hearty casserole preps in 10 minutes. And because it’s an all-in-one-dish dinner, no sides are required. A double bonus, saving me time and energy. Everybody at my house goes loco for Mexican dishes, especially this one with its creamy tortilla layers and chopped green chiles.

Here's how I make it my own:

  • Pepper Jack instead of Monterey Jack adds a little kick
  • Mixing in frozen peas or carrots when I want more veg
  • Adding a layer of seasoned rice - try it with Old El Paso Mexican Rice
