It seems my husband and I are now at a point in our lives where inviting one or two friends over for the afternoon quickly multiplies into a half-dozen (or more) mouths to feed, now that everyone has a kid or two in tow. That’s why I love this quick and easy version of mac and cheese. The kids are guaranteed to eat it and the adults don’t mind indulging in a creamier, cheesier version of the childhood classic. Way better than anything out of a box, if you ask me.
Here's how I make it my own:
- Mix in whatever cheese is in the fridge. The recipe calls for 2 cups of sharp cheddar, but I’ve been known to toss in a handful of Colby-Jack with great success. Shhh!
- Stir in some pre-cooked, cubed ham at the end for an extra satisfying dish.
- Microwave up some broccoli to serve on the side. Just make sure you call it “little trees” and the kids are sure to eat it.
