I just love easy weeknight dinners. After a hard day’s work, and school for the kiddos, my family is always ready for a hearty meal. It’s extra nice when I can get one on the table with ease.
I also try to incorporate vegetables into every meal as often as I can, so this bake comes in handy. With chicken, penne pasta and a lot of veggies, it’s the ultimate family meal. Taco seasoning is the secret weapon to extra flavor in this dish. The kids even ask for seconds!
Spray a nonstick skillet with cooking spray; heat over medium heat. Add 2 cups thinly sliced red and green bell peppers and 1 small white onion, chopped, to skillet; cook and stir about 10 minutes or until tender.
Meanwhile, cook 2 cups uncooked penne pasta as directed on package until al dente. Drain.
In large bowl, toss together cooked pasta, bell peppers and onion, 1 lb shredded cooked chicken breast, 1 package Old El Paso™ taco seasoning mix and 1 cup whipping cream until combined.
