Easy Fajita Pasta Bake
Everyone eats their veggies when they’re baked with cheesy noodles.

I just love easy weeknight dinners. After a hard day’s work, and school for the kiddos, my family is always ready for a hearty meal. It’s extra nice when I can get one on the table with ease.

I also try to incorporate vegetables into every meal as often as I can, so this bake comes in handy. With chicken, penne pasta and a lot of veggies, it’s the ultimate family meal. Taco seasoning is the secret weapon to extra flavor in this dish. The kids even ask for seconds!

Easy Fajita Pasta Bake

Spray a nonstick skillet with cooking spray; heat over medium heat. Add 2 cups thinly sliced red and green bell peppers and 1 small white onion, chopped, to skillet; cook and stir about 10 minutes or until tender.

Meanwhile, cook 2 cups uncooked penne pasta as directed on package until al dente. Drain.

In large bowl, toss together cooked pasta, bell peppers and onion, 1 lb shredded cooked chicken breast, 1 package Old El Paso™ taco seasoning mix and 1 cup whipping cream until combined.

Pour into a 13x9 baking dish that has been lightly coated with cooking spray. Sprinkle 1 cup shredded Colby-Monterey jack cheese blend (4 oz) evenly over top.

In your oven (preheated to 350°F) bake 15 to 20 minutes or until thoroughly heated and cheese is melted.
