How I’m Serving One-Pot Enchilada Pasta

Choosing between Mexican and Italian food can be tough, but this Tex-Mex pasta is a tasty compromise. (Not to mention easy!) With all the time I saved on cleanup, I dreamed up a few different ways to make this one-pot dinner.

Here's how I make it my own:

  • Lighten Up: Sub in ground turkey for ground beef. To boost the flavor, go with spicy enchilada sauce instead of mild.
  • Spanish Twist: Check your local grocery store for ground chorizo sausage. Like Italian sausage, it’s made from pork, but the seasoning is entirely different.
  • Toppings, toppings, toppings! Serve with crushed tortilla chips, cilantro and chopped green onions.
