As I write this blog, it’s not even lunchtime, and I’ve asked myself the following question as many times as I can count on one hand: “How can I make my life easier?” I’m a working single mom; my days begin early and end late … and they’re filled with a constant stream of energy and focus pointed towards my toddler son. I try to squeeze in “me” time between commutes and doctor appointments and oil changes and grocery shopping, because that’s important too. Trust me when I say these are all good things that I welcome into my life with open arms. But man oh man – they all add up to one huge time suck.
I’m coming to terms with a harsh reality: You can’t do everything perfectly, but you can certainly try to make things easier and have fun doing it. And if there's one area that can be removed of burdens, it's what I decide to make for dinner. In my world, cooking counts as “me” time. There’s nothing better than a having a savory dinner on the stove, pouring a glass of red wine and helping my little boy piece together a puzzle or paint his 3-year-old versions of abstract art. Here are three easy dinners that are definitely in my upcoming menu roster.
1. Four-Cheese Pizza
If you say “cheese pizza,” my little guy will surely come running. Mention that it takes about a half hour and has a mishmash of four gooey cheeses, and mom will too. This Four-Cheese Pizza is one of the most-loved recipes in the Pillsbury collection.
