We all have those nights when there just doesn’t feel like enough time to make a nice dinner. Maybe the kids have soccer practice, or you ended up working late. Either way, it can be tough to get a healthy and filling meal on the table fast. But not anymore! This chicken and vegetable sheet-pan recipe is a weeknight dinner saver with protein-packed chicken breasts and lots of vegetables. All you have to do is lay the ingredients on the pan, bake and serve!
First, wash and pat dry the chicken breasts, and then season with salt and pepper. Slice each chicken breast in half diagonally and lay on the sheet pan. (This will speed up the cooking time.)
