So, one Tuesday evening, I found myself in a familiar position, staring into my fridge, wondering what in the world to make for dinner. Leftover rotisserie chicken and shredded cheese? Not exactly a complete meal.

A quick scan of the pantry revealed a forgotten box of Southwest Grains. And I thought, “Why not?” It was exactly what I needed to make a meal out what I had on hand.

The best part about this dinner is the convenience factor. The grains come in a bag you boil and rinse. So easy! While the grains cook, brown the chicken and grab any toppings. This weeknight dinner comes together quickly and is a great way to use up on-hand ingredients.
