I’ve never met a cheesy casserole I didn’t like, and this Tex-Mex version is no exception. On busy weeknights, I’m looking for dinners that keep hands-on time to a minimum. I also love recipes that are easy to customize, depending on what I have on hand. In my experience, if you cover anything in a blanket of cheese and bake it, chances are it will taste pretty good.

Here's how I make it my own:

  • Add a can of corn and a can of black beans for texture and flavor.
  • Just before digging in, I top it off with chopped cilantro and a squeeze of lime juice. So simple and fresh!
  • Pile on guac, a spoonful of salsa and a drizzle of hot sauce. (When I was little, my nickname at the dinner table was “the condiment queen.” Some things never change.)
