Chocolate Chip-Strawberry Shortcakes

On a sunny day, there’s nothing better than going to the farmers market or making a quick trip to a local farm. There’s always something that sparks my interest. For example, strawberries from a recent trip turned into quick and easy shortcakes. 

After I’d finished making them, I placed the extras in the freezer. We all loved the frozen version much better, probably because it was really hot that day. Either way, you’ll love this twist on the classic strawberry shortcake.

Chocolate Chip-Strawberry Shortcakes

For these shortcakes I used one package Simply... Chocolate Chip Cookies, but you can use whatever ready-to-bake cookie you have in the fridge. Bake according to the package instructions.

Chocolate Chip Cookie Dough

To make the shortcakes, top half of the cookies with whipped topping. Arrange a couple of strawberry slices on top of the whipped topping. Top with the remaining cookies.

Can’t make it to the market or a farm? Strawberries are widely available at the grocery store, or you can use other fresh fruit instead. Think berries or slices of peaches or pears.
