All summer long I dread the thought of the warm weather disappearing, but by August I start getting excited for the colder months. I love the change in seasons and there’s nothing better than a crisp fall day and the smells of a new school year in the air. This is also when we start to crave apples and the yummy delicious treats we make with them. Our girls were so excited to see that we mixed up these quick apple-cinnamon treats made with Cinnamon Toast Crunch for them; I can’t wait for you to try ‘em!
You’ll want to start with the apples so that they can cool. Melt two tablespoons butter over medium heat and add your finely chopped apples. This part is important; you must cook the apples until they are beginning to turn golden and the pan is dry. If there is still liquid dumped into the cereal you’ll have a soggy mess. Just cook them and then set them aside with a little sugar and they will be great.
Then move on to the marshmallows. Melt 1/4 cup butter over medium heat. Add marshmallows and cinnamon; cook and stir until marshmallows are completely melted. I always feel like it won’t be smooth when it starts to melt together with the marshmallows, but just keep stirring, it will happen.
Next toss it all together, the marshmallows and apples, with the cereal and you’re all set.
Spoon into lined muffin cups. Cool slightly, about 5 minutes before serving.
