Creamy pumpkin-flavored mousse and gooey chocolate cookies all drizzled with hot fudge–dessert doesn’t get much better!

Sometimes you just want a dessert that comes together in a matter of minutes, and is only a few ingredients. No need to haul out the mixer for this one. Quick and easy desserts can still be impressive and perfect for entertaining, or even a busy weeknight. You don’t have to dirty every dish in your kitchen to impress! Just look at all those different layers. Creamy pumpkin-flavored mousse and gooey chocolate cookies all drizzled with hot fudge–dessert doesn’t get much better!

Easy Pumpkin and Fudge Parfaits

To make these gorgeous parfaits, you start by baking the Pillsbury Molten Fudge Cookies according to the package directions. Then remove them from the oven and allow them to cool.

Next gently fold together, two containers of Yoplait Light Pumpkin Yogurt with one cup of whipped topping. This transforms the yogurt into almost a pumpkin mousse.

Assembling the parfaits is easy! Start with one cookie that is broken into four pieces, then layer with a scoop of the pumpkin “mousse” mixture. Repeat with another layer of cookie and mousse.

To finish off the parfaits, top with a dollop of whipped topping. Use the fudge packet that came with the cookies, to drizzle a little chocolate over each parfait.

These parfaits are best served within an hour of assembling. But you can make the cookies and the “mousse” ahead of time, and let sit until ready to serve.
