Yep, savory-stuffed waffles are real and they are spectacular! These waffles are filled with all the delicious things you would find in a Western Omelet. I’m talking about sweet bell peppers, smoky ham, melty cheese—all inside a buttery and flaky biscuit waffle! These waffles require no messy batter and come together in minutes.
Does it get any better than that? I think not!
To get started chop up your desired veggies. In a medium-sized bowl, combine 4 eggs, ½ cup diced ham, ½ cup diced peppers, ¼ cup diced onion. Season with salt and pepper.
Cook up the omelet as you normally do. I used a microwave for 3 minutes on high, stirring often. Let it cool slightly.
Next, make a shallow slice into each biscuit, just to gently open it up so you can fill it with a tablespoon of cooked veggies and eggs.
Add a few cubes of the cheese in there as well.
Seal up the biscuits and place them into a waffle iron prepared with nonstick cooking spray. Leave them in there for a few minutes; you’re looking for an even gold color on both sides.
Place them onto a sheet pan and top them with the shredded cheddar. Broil them for approx. 3-5 minutes just to get them super crispy and melted.
