Having four hungry kids at home, I know the importance of having nutritious and filling snacks on hand. That’s why I’m in love with these oatmeal bars. I can whip ‘em up in less than 10 minutes the night before school, pop them in the fridge, and cut them in the morning for a super-portable breakfast or a tasty midmorning snack. If you think about it, the flavor options are endless when it comes to these tasty bars!
Start by placing 1 cup of old-fashioned oats and 1 cup of nuts (I went with pistachios) into the bowl of your food processor. Pulse it several times to cut down the oats and chop up the nuts.
Add in a 5.3 oz. carton of
Yoplait Vanilla Greek yogurt 1/2 cup of dried fruit (I went with cranberries here), a tablespoon of honey and a touch of salt.
Give it a few more pulses until the oat mixture forms into a dough. Scrape down the sides of the bowl if necessary.
Press the dough into a foil-lined loaf pan. Toss it in the fridge for at least 30 minutes, up to overnight.
Remove the oatmeal mixture from the pan and cut into 8 equal size bars. Melt some white chocolate candy melts according to package instructions and then drizzle it over the tops of each bar. Once the chocolate has hardened you can enjoy them immediately or store them covered in the fridge for up to 3 days. You’ll be making several batches of these oatmeal bars because they disappear so quickly!
