In my house, breakfast is usually something cold like cereal or bagels, just because time is at a minimum during the week. As soon as the weekend comes around, I tend to switch things up and the kids love it! Mexican-influenced breakfasts are a big favorite with the family; the ingredients are always on hand and the flavors are always so tasty!

Old El Paso Stand ’n Stuff tortillas are perfect for hand-held breakfast burritos. The kids can fill them up themselves and the real deal sealer for me is there’s very little mess. The filling stays inside instead of falling out as soon as you pick it up, so less mess makes for happy kids and a happy daddy!

First, prepare your ingredients. Like I said, we typically have everything in the fridge or pantry.

Cook 3 eggs in the microwave for about 90 seconds and divide among the tortillas.

Heat 3 pre-cooked breakfast sausages in the microwave, dice and place on top of the eggs. Slice half of an avocado and add it on top of the tortillas along with the grated cheese, salsa and fresh cilantro.
