5 Easy Egg Bakes

Cheesy Southwest Egg Bake
A Pillsbury editor shares recipes for egg bakes that take only 30 minutes or less to prep.
By Alyssa Vance

I don’t know about you, but I’m a huge fan of a good egg bake. They’re hearty, easy and always a reliable crowd-pleaser. Another bonus? They’re incredibly easy to customize. Whether you’re feeding a meat-lover or a veggie fanatic, an egg bake is a surefire way to make a meal they’ll devour.

I have a (very) small sample of scientific proof to back my support of egg bakes. I recently hosted a brunch and served seven different dishes, including a challah and cream cheese egg bake. The egg bake was the only recipe people asked for afterwards. The proof’s in the eggs! Here are five delicious (and easy!) recipes to keep in your back pocket.

Mexican Breakfast Casserole

  • Hash browns, sausage, salsa and taco seasoning create one tasty mix for this Mexican Breakfast Casserole
  • Having tried this tangy, fluffy Goat Cheese and Kale Egg Bake, I can completely vouch for its “yum” factor. (Here’s a hint: It’s off the scale.)
  • I love recipes that only call for one dish, like this Cheesy Southwest Egg Bake. It’s an ideal brunch recipe – and that’s a claim backed by reviews from at-home chefs who’ve cooked it themselves!
  • This Ham n’ Cheese Omelet Bake is a fun twist on the classic breakfast dish, thanks to a combo of Grands! Flaky Layers Biscuits, two types of cheese, ham and broccoli.
  • These baked Bacon-Cheese Pull-Aparts are light on the eggs, but it doesn’t mean they don’t have a place on this list. If the reviews are any indication, they don’t skimp on flavor.
