Spaghetti Squash with Parmesan How-To

Have you ever tried spaghetti squash? It’s a fun way to change up your side dish routine, because the squash’s flesh makes strands that look like spaghetti noodles. Have a child that doesn’t like veggies? The appearance of this recipe might turn your child into a squash lover! 

Here’s how you make it: 

Start off by cutting the squash in half. Make sure you do this carefully with a sharp knife...the squash’s skin is tough and hard to cut through. 

Place the squash flesh side down on a baking sheet lined with foil. Bake until you can press a knife through the skin with just a little bit of resistance.

When the squash is cool enough to handle, use a fork to separate the strands. Place in a bowl.
Put butter into the bowl, and let the heat from the squash melt it. Stir gently. Add Parmesan, pine nuts and spices. Season to taste with salt and pepper.
This not only makes a great side dish but a tasty meatless entrée as well. Serve it with a slice of French bread, and you have a healthy dinner in no time!
