This is a wonderful meal, easy to make and very tasty. It's a nice way to get veggies into those somewhat reluctant to eat them. There are lots of little variations you can do to make this your own.

This was really good! My husband even went back for seconds and he's not that keen on summer squash. I used 94% lean ground turkey and yellow squash. Looking forward to making it again.

I made the mistake of using brown rice instead of white rice, meaning that my rice never really cooked enough even with additional time. My husband and I still really enjoyed this recipe - flavorful and filling. And just like one of the other reviewers, I used a can of drained unsalted tomatoes. The next time I make this I may try it with ziti instead of rice. Delicious!

This was delicious! I added a little bit extra onion and zucchini. & my tomato was bad so I used 1 cup of cubed tomatoes from a can. I used a dark pan instead of a glass one and it cooked perfectly still. Probably one of my favortie Pillsbury recipes yet!

I was worried that my family of picky eatters would not like it. But they cleaned their plates. It was very good and I will be making it again. Infact my family has already asked for it again.
