Zucchini 'n Hamburger Casserole

cup uncooked medium-grain white rice

medium zucchini, cut into 1/4-inch-thick slices (2 cups)

large tomato, chopped (1 cup)

can (19 oz) Progresso® Vegetable Classics tomato basil soup
2
cups shredded mozzarella cheese (8 oz)

  • 1 Heat oven to 375°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray. In 10-inch skillet, cook beef and onion over medium-high heat, stirring frequently, until beef is thoroughly cooked; drain. Sprinkle with salt and pepper.
  • 2 Place rice and water in baking dish; stir to mix. Layer cooked beef, zucchini and tomato over rice. Pour soup over top. Cut 16x12-inch sheet of foil; spray with cooking spray. Cover dish with foil, sprayed side down.
  • 3 Bake 40 minutes. Uncover dish; sprinkle cheese over top. Bake uncovered 10 to 15 minutes longer or until edges are bubbly and cheese is lightly browned.

This is a wonderful meal, easy to make and very tasty. It's a nice way to get veggies into those somewhat reluctant to eat them. There are lots of little variations you can do to make this your own.

This was outstanding, very easy, and good for you. I used turkey burger, but that's the only change I made. DELICIOUS!

This was really good! My husband even went back for seconds and he's not that keen on summer squash. I used 94% lean ground turkey and yellow squash. Looking forward to making it again.

I made the mistake of using brown rice instead of white rice, meaning that my rice never really cooked enough even with additional time. My husband and I still really enjoyed this recipe - flavorful and filling. And just like one of the other reviewers, I used a can of drained unsalted tomatoes. The next time I make this I may try it with ziti instead of rice. Delicious!
