This colorful wholesome bread is chock-full of good things. Using low-fat yogurt instead of oil reduces the fat considerably. The Swiss and Parmesan cheeses add calcium, riboflavin (vitamin B2) and a bit of protein.
Pimientos, more often sold in jars than fresh, come from a particularly thick-skinned sweet pepper that looks like a heart-shaped bell pepper.
Serve the bread with a fresh fruit salad and cups of piping hot tea with lemon.
For a vegetarian feast, serve this bread alongside a hearty rice-and-ban entree and a large tossed salad.
