Wilted Spinach Salad with Smoked Turkey

Ingredients

cups torn fresh spinach

cups cubed smoked turkey

cup sliced fresh mushrooms
1/2
cup shredded carrot
1/4
cup slivered almonds, toasted if desired*

slices bacon, cut into 1/2-inch pieces
1/3
cup vinegar
1
tablespoon honey
1/4
teaspoon salt
1/8
teaspoon pepper

Directions

  1. 1 In large bowl, combine spinach, turkey, mushrooms, carrot and almonds. Set aside.
  2. 2 Cook bacon in small skillet over medium heat until crisp. Remove bacon from skillet; drain on paper towels.
  3. 3 Reserve 2 tablespoons drippings in skillet. Add vinegar, honey, salt and pepper; cook and stir until hot. Pour over spinach mixture; toss gently. Sprinkle with bacon. Serve immediately.
