Whole Wheat Apple Muffins

These cinnamon glazed delicious apple muffins are made using whole wheat baked - in just 45 minutes!

Ingredients

Muffins

cups all-purpose flour

cups chopped peeled apples

cup whole wheat flour
1/2
cup packed brown sugar

cup skim milk
1/4
cup margarine or butter, melted
1/4
cup refrigerated or frozen fat-free egg product, thawed, or 1 egg, slightly beaten

Topping

cup packed brown sugar

tablespoon finely chopped nuts

teaspoon cinnamon
  • 1 Heat oven to 400°F. Grease bottoms only of 12 muffin cups or line with paper baking cups. In small bowl, combine 1/2 cup of the all-purpose flour and apples; stir until apples are well coated.
  • 2 In large bowl, combine remaining all-purpose flour, whole wheat flour, 1/2 cup brown sugar, baking powder, salt and 1/4 teaspoon cinnamon; mix well. Add apples and all remaining muffin ingredients; stir just until dry ingredients are moistened. Divide batter evenly into greased muffin cups.
  • 3 In small bowl, combine all topping ingredients; sprinkle about 2 teaspoons over each cup.
  • 4 Bake at 400°F. for 20 to 25 minutes or until toothpick inserted in center comes out clean. Immediately remove from pan. Serve warm.
