  • 1 Heat oven to 400°F. Grease bottoms only of 12 muffin cups or line with paper baking cups. In small bowl, combine 1/2 cup of the all-purpose flour and apples; stir until apples are well coated.
  • 2 In large bowl, combine remaining all-purpose flour, whole wheat flour, 1/2 cup brown sugar, baking powder, salt and 1/4 teaspoon cinnamon; mix well. Add apples and all remaining muffin ingredients; stir just until dry ingredients are moistened. Divide batter evenly into greased muffin cups.
  • 3 In small bowl, combine all topping ingredients; sprinkle about 2 teaspoons over each cup.
  • 4 Bake at 400°F. for 20 to 25 minutes or until toothpick inserted in center comes out clean. Immediately remove from pan. Serve warm.

Expert Tips

Are some of yesterday's muffins left? Use them to make an impromptu "trifle" dessert. Fold chunks of muffin into vanilla pudding and top with a spoonful of whipped cream.

Pipe a spiral design on the top of each muffin with a glaze made of powdered sugar mixed with milk and a few drops of pure vanilla extract.
