cups Progresso® beef flavored broth (from 32-oz carton)

cups uncooked wide egg noodles (8 oz)

cup Green Giant® Valley Fresh Steamers™ frozen baby sweet peas

teaspoon paprika

lb cooked roast beef, cut into thin bite-size strips
1
container (8 oz) sour cream
2
medium green onions, sliced (2 tablespoons), if desired

  • 1 Spray 12-inch skillet or 5-quart Dutch oven with cooking spray; heat over medium-high heat. Add onion; cook and stir 2 to 3 minutes or until crisp-tender.
  • 2 Stir in water, broth, uncooked noodles, frozen peas and paprika. Heat to boiling. Reduce heat to medium-low; cover and simmer 6 to 8 minutes, stirring occasionally, until noodles are desired doneness and liquid is almost absorbed.
  • 3 Stir in beef and sour cream. Cook 1 to 2 minutes longer, stirring constantly, just until hot. Sprinkle with green onions.

Expert Tips

Order 1/2 lb roast beef, sliced about 1/2 inch thick, from the grocery store's deli. Then it's easy to cut it into the bite-sized strips.

Chopped fresh parsley makes a nice garnish for this dish.

I used stew beef instead and I added mushrooms and more peas. I also added a few red pepper flakes for a little bit of extra flavor because I thought it was just a little bland but it you dress it up it is great and very easy.

I was worried I wouldn't like this at all so I was hesitant to eat it but it was actually very good. Might not have as much flavor as some people would prefer, but it worked well for my family. I didn't want to have to cook the meat so I bought some from a deli - it was a bit more expensive then I would have preferred it was definitely worth it. This is one I will make plenty of times.

I tried this tonight to use up some leftover steak meat. The recipe is simple and straight-forward. I added about a cup of sliced mushrooms with the onions. I think next time I will add the whole package of frozen peas. And it needs about 2 cups of sour cream to really have a saucy stroganoff gravy. I can't put my finger on it, but it needs something else "spice wise?" Family thought it needed more "beef" flavor. But it seemed to be a hit with the wife and son!

I made this for my husband, and he thought it was awesome. I added a small can of Green Giant mushrooms, a shredded carrot, and topped with mozzarella and cheddar cheeses. Definately a keeper, yummy!

Ummm this sounds good and all....but what if you wanna use fresh roast beef?...I think you guys should write in the step in how to cook it if you wanna buy a bit of fresh roast Beef not from the deli...Usually when ppl make this..they use leftover Beef...but Im one person and never find any reason to make a huge roast...
