Weekend Breakfast Burritos

While the burritos bake, melting the yummy cheese, you'll have time to brew coffee, pour juice--or read the paper and relax.

Ingredients

tablespoon margarine or butter

eggs, beaten

teaspoon pepper

cups diced Canadian bacon

(8-inch) flour tortillas

oz. (1 1/2 cups) shredded Cheddar cheese
  • 1 Heat oven to 400°F. Melt margarine in large skillet over medium-high heat. Add eggs, pepper and bacon; cook and stir about 5 minutes or until eggs are firm but moist.
  • 2 Spoon egg mixture evenly onto each tortilla. Top each with 1 tablespoon cheese. Roll up tortillas tightly. Place, seam side down, in ungreased 13x9-inch (3-quart) baking dish. Sprinkle remaining cheese over tortillas.
  • 3 Bake at 400°F. for 10 to 15 minutes or until cheese is melted. If desired, serve with sour cream and salsa.
