tablespoons water

tablespoon finely chopped fresh mint
1 1/2
lb seedless watermelon, rind removed, cut into chunks
1/2
to 1 tablespoon fresh lime juice
1/2
teaspoon grated lime peel

  • 1 In 1-quart saucepan, heat sugar, water and mint over medium heat 3 to 4 minutes, stirring constantly, until sugar dissolves. Remove from heat.
  • 2 In blender, place watermelon, lime juice and lime peel. Cover; blend until smooth. Add sugar mixture; blend again.
  • 3 Pour mixture into 8-inch square pan. Freeze 1 to 2 hours, scraping with fork every 30 minutes, until all liquid has frozen.
  • 4 Spoon evenly into 8 shot glasses. Serve.

EXPERT TIPS

Expert Tips

Fill the shot glasses up to 30 minutes in advance, and store in the freezer until serving time.

Alternatively, serve this as a larger dessert in martini glasses.
