Vegetarian Navy Bean Soup

Ingredients

cup finely chopped carrots

cup finely chopped celery, including leaves

cup finely chopped onion

(16-oz.) pkg. dried navy beans, rinsed

quarts (8 cups) water

cup vegetable juice cocktail

tablespoon chicken-flavor instant bouillon, if desired

teaspoon crushed red pepper flakes
  • 1 In 3 1/2- to 4-quart slow cooker, combine all ingredients; mix well.
