This is a fabulously easy and yummy one pan dinner. To make it even quicker to make, I use baby carrots and cut them in half. As it is, the spicyness is just right but you can put the whole packet of taco seasoning in if you want to ramp it up. I double the recipe and keep it warm in a crockpot and take it to carry-ins. Everyone always raves and wants the recipe.
