Ingredients

lb beef stew meat, cut into bite-size pieces if needed

lb small red potatoes, unpeeled, each cut into 8 pieces (about 1 1/2 cups)

medium onion, chopped (1/2 cup)

cloves garlic, finely chopped

teaspoon seasoned salt

teaspoon pepper

dried bay leaves

can (15 to 16 oz) great northern beans, drained, rinsed

can (14.5 oz) diced tomatoes, undrained

cups Progresso® beef flavored broth (from 32-oz carton)

cups Green Giant® Valley Fresh Steamers™ frozen mixed vegetables, thawed

Directions

  • 1 Spray 3- to 4-quart slow cooker with cooking spray. In cooker, mix all ingredients except mixed vegetables.
  • 2 Cover; cook on Low heat setting 7 to 8 hours.
  • 3 Add thawed mixed vegetables. Increase heat setting to High. Cover; cook 20 to 30 minutes longer or until vegetables are crisp-tender. Remove bay leaves before serving.

The basics of this recipe are very good, with easy preparation and readily available ingredients, but I had to kick up the flavor quite a bit by adding additional misc. seasonings.
