Two-Cheese and Turkey Mexican Pizzas

Ingredients

oz fat-free cream cheese, softened

teaspoons lime juice

teaspoon ground cumin

flour tortillas (8 to 10 inch)

oz sliced smoked turkey breast (from deli), cut into strips
1/2
cup drained canned black beans, rinsed
1/2
cup frozen whole kernel corn (from 1-lb bag), thawed

medium tomato, diced
1/2
cup shredded reduced-fat Monterey Jack or Cheddar cheese (2 oz)

tablespoons chopped fresh cilantro

Directions

  1. 1 Heat oven to 425°F. Line cookie sheet with foil; spray foil with cooking spray. In small bowl, mix cream cheese, lime juice and cumin until well blended.
  2. 2 Spread cream cheese mixture evenly over tortillas. Place on cookie sheet. Top each with turkey, beans, corn, tomato and cheese.
  3. 3 Bake 5 minutes or until pizzas are thoroughly heated and cheese is melted. Sprinkle with cilantro; cut into wedges. Wrap each pizza securely with foil; take with you for an on-the-go dinner.
