Turkey Sausage and Zucchini Frittata

Ingredients

cups refrigerated or frozen fat-free egg product, thawed, or 6 eggs

tablespoons skim milk

teaspoon salt, if desired

teaspoon dried Italian seasoning

lb. turkey sausage links, cut into 1/4-inch pieces, or bulk turkey sausage

cup finely chopped carrot
1/4
cup finely chopped green onions

medium zucchini, chopped
1
oz. (1/4 cup) shredded mozzarella cheese
  • 1 In medium bowl, combine egg product, milk, salt and Italian seasoning; beat well. Set aside.
  • 2 Spray 10 or 12-inch nonstick skillet with nonstick cooking spray. Add sausage; cook and stir over medium heat for 8 to 10 minutes or until no longer pink. Drain well.
  • 3 Add carrot and onions; cook and stir over medium heat for 2 to 3 minutes or until softened. Add zucchini; cook and stir an additional 2 minutes.
  • 4 Add egg mixture to skillet; cover and cook over low heat for 8 to 10 minutes or until set, lifting edges occasionally to allow uncooked egg mixture to flow to bottom of skillet.
  • 5 Sprinkle with cheese. Cover; cook an additional 1 minute or until cheese is melted. To serve, cut into wedges.
