medium carrots, shredded (3/4 cup)

cup raisins

cup vanilla fat-free yogurt

tablespoons fat-free mayonnaise or salad dressing

French rolls (2 oz each), halved lengthwise
1/2
lb thinly sliced cooked lean turkey breast

leaves leaf lettuce

Directions

  1. 1 In small bowl, mix carrots, raisins, yogurt and mayonnaise.
  2. 2 Spread cut sides of both halves of each roll with carrot mixture. Fill each roll with turkey and lettuce leaf. Wrap each sandwich securely with foil or plastic wrap; take with you for an on-the-go dinner.
