SAUCE

cups chopped red, yellow or green bell peppers

medium onion, thinly sliced, separated into rings

teaspoon garlic powder

oz. cooked turkey, cut into 2x1/4x1/4-inch strips (1 cup)

cup frozen whole kernel corn, thawed

(15-oz.) can black beans, drained, rinsed

( 7- or 8-inch) Greek-style pitas, heated

Directions

  1. 1 In small bowl, combine sauce ingredients; blend well. Refrigerate until serving time.
  2. 2 Spray large nonstick skillet with nonstick cooking spray. Add bell peppers, onion and garlic powder; cook over medium-high heat for 2 to 3 minutes or until vegetables are crisp-tender.
  3. 3 Stir in turkey, corn and beans. Reduce heat to medium-low; cover and cook 4 to 6 minutes or until thoroughly heated. Spoon turkey mixture onto center of heated pitas; top with sauce. Fold pitas over filling.
