Turkey Kielbasa with Cabbage and Sweet Potatoes

Ingredients

  • 1 lb. cooked, smoked turkey kielbasa or Polish sausage, cut into 6 pieces
  • 2 medium dark-orange sweet potatoes, peeled, cut into 1-inch chunks
  • 1/2 head green cabbage, cut into 6 wedges
  • 1/2 red bell pepper, cut into thin bite-sized strips
  • 1/2 teaspoon dried marjoram leaves
  • 1/4 teaspoon salt
  • 1/4 teaspoon coarse ground black pepper
  • 1/2 cup ready-to-serve chicken broth with 1/3 less sodium, or water

    Place sausage pieces in 12-inch nonstick skillet or Dutch oven. Arrange sweet potatoes, cabbage and bell pepper around sausage. Sprinkle vegetables with marjoram, salt and pepper.

    Add broth to skillet. Bring to a boil. Reduce heat to medium-low; cover and cook 15 to 20 minutes or until vegetables are tender, stirring occasionally.

  • Cabbage is a cruciferous vegetable; it contains antioxidants which may reduce the risk of some cancers.
