Turkey Breast with Bulgur and Feta Cheese

Ingredients

cup uncooked bulgur or cracked wheat

cup sliced green onions

teaspoons dried oregano leaves

(14-oz.) can chicken broth

tablespoons lemon juice

(2- to 2 1/2-lb.) bone-in turkey breast half

teaspoon salt

cup pitted kalamata or Greek olives

oz. (1/4 cup) crumbled feta cheese

Directions

  1. 1 In 3 1/2- to 6-quart slow cooker, combine bulgur, onions, 1 teaspoon of the oregano, pepper, garlic, broth and lemon juice; mix well. Sprinkle turkey breast half with salt and remaining 1/2 teaspoon oregano. Place turkey on top of bulgur mixture.
  2. 2 Cover; cook on low setting for 4 to 5 hours.
  3. 3 Remove turkey from slow cooker. Cut turkey into slices. Stir olives and cheese into bulgur mixture. Serve turkey with bulgur mixture.
