The best way to thaw a turkey breast is in the refrigerator. Allow about 24 hours for the 2- to 2 1/2-pound turkey breast half in this recipe. Or you can use the cold water thawing method by placing the tightly wrapped turkey breast half in cold water. Allow 30 minutes per pound to thaw, and change the water often so it stays cold.
