(8-oz.) loaf French bread

tablespoons reduced-fat margarine

(6-oz.) can water-packed chunk light tuna, drained, flaked
1/2
cup sliced ripe olives
1/2
medium tomato, chopped
1/2
to 1 cup shredded lettuce
1
tablespoon olive or vegetable oil
2
teaspoons red wine vinegar
Salt and pepper to taste

  • 1 Cut bread in half lengthwise; spread lightly with margarine. On bottom half, layer tuna, olives, tomato and lettuce.
  • 2 In small bowl, combine oil and vinegar; mix well. Drizzle over lettuce. Sprinkle with salt and pepper. Cover with top half of bread. To serve, cut into 4 sandwiches.
