I made this recipe for Mother's Day, coconut is one of my Mom's favorites. The pie was a AWESOME, according to my reviewers.I love to bake and cook and I am actually recipe browsing obsessed, I have a very unique dietary situation so I am unable to taste the recipes that I make. Based on reading the reviews, I did use the suggestion of adding more toasted coconut, I added more to the crust and about 1 to 1 1/2 cups to the custard filling, other than that I followed the recipe exactly. My Mom was in heaven. I will definitely make this pie again.

Delish!! This was one of the desserts we had for our luau this past weekend. There wasn't a crumb left! Absolutely will make again.

Be sure to heat the mixture containing the egg yolks to 160 degrees. If you do not get it up to that temp. it will not thicken enough. It might seem thick, but after it is refrigerated it will loosen up, and not be thick enough. There is an enzyme in the egg yolk that prevents thickening 160 will kill it.
