Ingredients

lb extra-lean (at least 90%) ground beef

medium onions, chopped (1 cup)
4
medium tomatoes, finely chopped (3 cups)
2
cups reduced-sodium beef broth
2
tablespoons chili powder
1
tablespoon ketchup
4
soft corn tortillas, cut into 1x1/2-inch strips
1/2
cup shredded reduced-fat sharp Cheddar cheese (2 oz)

Directions

  1. 1 Heat 2-quart nonstick saucepan over medium-high heat. Add ground beef and onions; cook 4 to 6 minutes, stirring frequently, until beef is thoroughly cooked and onions are tender.
  2. 2 Stir in tomatoes, broth, chili powder and ketchup. Heat to boiling. Reduce heat to medium-low; cover and simmer 5 minutes. Increase heat to medium. Uncover; cook 5 minutes longer.
  3. 3 Stir in tortilla strips until thoroughly coated. Cover; cook 3 minutes. Top individual servings with cheese.
