Tomato Basil Pasta Salad

Ingredients

lb plum (Roma) tomatoes, chopped (8 to 10 medium)

garlic cloves, finely chopped

cup olive or vegetable oil

cup chopped fresh basil leaves

oz mozzarella cheese, cut into 1/2-inch cubes (2 cups)

package (1 lb) rotini pasta
1/2
cup grated Parmesan cheese

Directions

  1. 1 In large bowl, mix tomatoes, garlic, salt, pepper, oil, basil and mozzarella cheese. Cover; refrigerate 2 hours to blend flavors.
  2. 2 Meanwhile, cook and drain pasta as directed on package. Rinse with cold water to cool; drain.
  3. 3 In large serving bowl, mix cooked pasta and tomato mixture until well combined. Sprinkle Parmesan cheese over top of salad.
