Thai Ginger and Lime Chicken over Rice

A mildly spicy ginger flavor to perk up chicken and rice. The beer adds another hint though is optional.

Ingredients

lb boneless skinless chicken thighs
1
can (10 3/4 oz) condensed cream of chicken soup
1
jar (4.5 oz) Green Giant® sliced mushrooms, undrained (or fresh Crimini are nice)
1
cup chopped white onion
1
can of beer (Pilsner / Lager - dark is probably too heavy of a flavor)
1
½ cups frozen vegetables, thawed (broccoli/carrot/snow pea mixture is good)
1
green and 1 red pepper
1-2
tsp minced garlic
2-3
tsp chopped ginger
½ cup Lawry’s® Thai Ginger with Lime Marinade
salt and pepper to taste (white pepper is good)

tbsp Olive OIl
1 1/2
cups uncooked white rice

  • 1 Cut the chicken into small chunks or strips. Set aside.
  • 2 If using fresh mushroom, slice. Otherwise drain can of mushrooms well.
  • 3 Start cooking the rice per usual instructions.
  • 4 Heat olive oil in skillet, add onion and mushrooms.
  • 5 When the onion is starting to go translucent add the chicken and brown for a bit.
  • 6 Mix in the soup, beer and other seasonings, Add more or less of the spices and seasonings to taste.
  • 7 Cut peppers in half, de-seed and slice into narrow strips.
  • 8 After most of the alcohol is cooked out, add the thawed vegetables and fresh peppers.
  • 9 Simmer for about 5 minutes. Vegetables should still be crunchy.
  • 10 Serve over rice, along with a salad.

Great combo of ingredients piqued my interest. I tweaked it by leaving thighs whole, marinating them for 1 hr in Lawry's, drained & cooked in oven @375 for 30 min. I added meat to pan on stove w/remaining mixture for 15 minutes, so flavors coagulated. I served it over long-grain rice. It's a keeper!

This should have a pleasant tang and a hint of beer flavor along with the ginger. The cooking out of the alcohol is variable due to altitude so it needs
