This was so awesome! I used Ken's Steakhouse Asian Sesame Lite that has ginger in it already and heated it with the peanut butter in the microwave for 30 seconds to make it thinner and mix better. I did not add peanuts and used flatbread wraps instead. It was very quick. The best peanut sauce I've had in a while and I usually make my own from scratch.

Good stuff for anyone who loves Thai-and super speedy too...I actually prefer the sauce a little thinner so would change that next time making, but the flavors are great! I used Newman's Own low fat sesame ginger for the dressing but anything similar would work.

My husband LOVES, LOVES, LOVES this! This is favorite dish that I've created thus far from the many recipes I've tried on here. I did add just a little more peanut butter than asked to make it creamier. Be careful with the gingerroot because it can become overwhelming in flavor. Also, I cubed the chicken because it soaked up the flavors more when in the pan. A++ recipe!
