Heat oven to 425°F. Spray 17x12-inch half-sheet pan with cooking spray. Unroll dough; place in pan. Starting at center, press out dough to edges of pan. Bake 8 minutes or until light golden brown.
In medium bowl, mix cream cheese and 6 tablespoons of the peanut sauce until smooth. Spread cream cheese mixture over partially baked crust to within 1/2 inch of edges. Top with chicken, onion and cheese.
Bake about 12 minutes longer or until chicken is hot and cheese is melted.
In small bowl, mix water and remaining 3 tablespoons peanut sauce. Top pizza with cucumber, bell pepper and cilantro. Drizzle with peanut sauce mixture. Cut into 4 rows by 3 rows.
