Enjoy wholesome turkey and vegetables sandwiches - perfect for an on-the-go dinner!

tablespoon honey

tablespoons Dijon mustard

cup sliced fresh mushrooms

cup thinly sliced red onion

small red bell pepper, cut into small thin strips

small yellow bell pepper, cut into small thin strips

tablespoons red wine vinegar

tablespoons reduced-fat garden vegetable cream cheese spread (from 8-oz container)

loaf French bread (1 lb), cut in half lengthwise
1
package (6 oz) thinly sliced low-fat oven-roasted turkey breast

Steps

  • 1 In small bowl, mix honey and mustard; set aside.
  • 2 Heat 8-inch nonstick skillet over medium heat. Add mushrooms, onion, both bell peppers and vinegar; cook, stirring occasionally, until peppers are crisp-tender.
  • 3 Spread cream cheese spread on cut side of top half of bread. Spread mustard mixture on cut side of bottom half of bread.
  • 4 Arrange half of turkey on bottom half of bread. Top with vegetable mixture and top half of bread. Cut loaf into 6 sandwiches. Wrap each sandwich securely with foil; take with you for an on-the-go dinner.
