medium baking potatoes

(18-oz.) container refrigerated taco sauce with seasoned ground beef

oz. (1/2 cup) shredded Cheddar cheese
1
medium Italian plum tomato, chopped
2
tablespoons sliced green onions

  • 1 Pierce potatoes with fork. Arrange in spoke pattern on microwave-safe paper towel in microwave. Microwave on High for 12 to 14 minutes or until tender, turning potatoes and rearranging halfway through cooking. Cool 3 minutes.
  • 2 Meanwhile, heat taco sauce with seasoned ground beef as directed on package.
  • 3 To serve, cut potatoes in half lengthwise; mash slightly with fork. Spoon about 1/2 cup ground beef mixture over each potato. Top with Cheddar cheese, tomato and green onions.

Been making my own version of this for the last 35 years, and have passed the love for this dish to my father, my daughter and now my grandchildren who beg for it at least once a month when they come for the night with Nana. If I make it just for myself I have enough that I can heat it up the next day and enjoy again. It combines two of my favorite foods - Baked Potato and Tacos.
