Swiss Turkey Broccoli Melts

fresh medium broccoli spears (1 lb.)

slices sourdough bread (6 to 7 inches in diameter), lightly toasted

tablespoons nonfat sour cream

to 3 teaspoons prepared horseradish

teaspoons Dijon mustard

oz. thinly sliced cooked turkey breast

cup roasted red bell peppers (from 7.25-oz. jar), drained, cut into strips

(1-oz.) slices reduced-fat Swiss cheese, cut into 12 strips

  • 1 In large nonstick skillet, bring 3/4 cup water and broccoli to a boil. Reduce heat; cover and simmer 4 to 7 minutes or until broccoli is crisp-tender.
  • 2 Meanwhile, place bread slices on ungreased cookie sheet. In small bowl, combine sour cream, horseradish and mustard; mix well. Spread over bread. Place turkey slices on bread.
  • 3 Drain broccoli. Top each sandwich with 4 cooked broccoli spears, bell pepper strips and 3 strips of cheese.
  • 4 Broil 3 to 4 inches from heat for 2 to 3 minutes or until cheese is melted.

* To cook broccoli in microwave, combine broccoli and 1/4 cup water in 12x8-inch (2-quart) microwave-safe dish. Cover with microwave-safe plastic wrap. Microwave on HIGH for 3 to 5 minutes or just until broccoli is bright green and crisp-tender. Drain.
