Sweet Potato Casserole

Pecans, coconut, brown sugar and cornflakes make a topping to these sweet potatoes to get those taste buds working overtime. It is a midwest favorite and was developed by a friend of mine.

Ingredients

large sweet potatoes or 1 large can
1 1/2
stick margarine
2
eggs, well beaten
1
C milk
2
T cornstarch
3/4
C sugar
Dash of cinnamon

C crushed cornflakes
1/2
C brown sugar
1
C coconut
1/2
C pecans, chopped

  • 1 Cook and mash sweet potatoes when soft.
  • 2 Add 3/4 C margarine as well as the next 5 ingredients.
  • 3 Beat with mixer and put into 9 x 13 pan.
  • 4 Bake 20 minutes at 400 degrees; remove from oven.
  • 5 Mix the 3/4 stick of margarine, crushed cornflakes, brown sugar, coconut, pecans well for topping.
  • 6 Top casserole with above mixuture;bake for 20 minutes; watching closely so it does not burn.

I thought this was delicious. I like the added pecans and coconut.
