# white sweet potatoes;
1
Tbsp minced garlic;
1/2
cup chopped walnut or pecan halves, chopped coarsley
2
Tbsp finely grated Tillamook Parmesan Cheese
2
tsp butter
2
tsp fresh lime juice
2
Tbsp fresh orange juice
1/2
cup fresh bread crumbs
1/4
cup chopped scallion greens
1/2
tsp ground allspice
2
tsp orange zest
Sea Salt to taste

  • 1 Prick sweet potatoes with fork and wrap each potato in foil.
  • 2 In an oven preheated to 400 degrees, roast potatoes until tender, approximately 45 min,
  • 3 Scoop potato flesh into a bowl. Mash with butter, zest, juices, allspice, garlic, and sea salt to taste
  • 4 Toss breadcrumbs, nuts, scallions and cheese in a bowl.
  • 5 Grease a 1 quart glass pie plate, and spoon potatoes into dish and top with breadcrumb mixture.
  • 6 Bake at 375 degrees until the crumbs are golden brown and potato mixture is hot, 30-40 min.

This is an old Scottish recipe often served with roast beef and Yorksure pudding.
