Heat oven to 375°F. Line cookie sheet with parchment paper. Divide turkey and ham into 8 portions. Set aside.
Separate dough into 8 biscuits. Using serrated knife, split each biscuit in half horizontally to make 16 biscuits halves; refrigerate 8 of the halves. Press remaining biscuit halves into 4-inch rounds. Top each with 1 meat portion, 1 slice cheese, 1 slice pear and 1 tablespoon of the preserves. Remove biscuit halves from refrigerator; press into 4 1/2-inch rounds. Place over filling; press edges to seal. Place 2 inches apart on cookie sheet. Cut 2 small slits on top of each biscuit.
Beat egg and 1 tablespoon water with fork; brush over tops of each biscuit. Bake 15 to 20 minutes or until golden brown.
